In The spring of 2019 Jacquith was hired to be lead barista at a small specialty grocery and cheese shop in Brooklyn, named Campbell & Co, where he would meet a cheesemonger named Amelia (Mother of Mozz, Slayer of Boards; First of her name) who would teach him the sacred ways of cheese. This small act of kindness would be the spark that started a life long passion for cheese. What started as a hyper-fixation would eventually bloom into a thriving cheeseboard business, and hopefully, one day, a brick and mortar cheese shop of my own.
